Steamed Vanilla Custard With Bananas (Organic Recipe)

Forget turning on the oven or dirtying a pot, and throw away that box of instant pudding. This delicate, moist custard can be prepared in 30 minutes. You need a flat steamer basket that is large enough to hold the ramekins. This is the kind of dessert that I sneak out of bed for and eat as a midnight snack by the light of the refrigerator.

2 large organic eggs
1 cup whole organic milk
½ cup sugar
1 teaspoon vanilla extract
2 organic bananas, sliced
Sprinkle of ground cinnamon

Fill a large pot with 2″ of water. Bring to a boil over high heat.

Meanwhile, in a medium bowl, whisk the eggs with the milk. Whisk in the sugar and vanilla extract.

Evenly divide the bananas among six 8-ounce oven-proof bowls or ramekins. Pour the custard evenly over the bananas. Sprinkle lightly with cinnamon. Cover each bowl with foil. Place in a steamer basket.

Remove the pot of boiling water from the heat and carefully place the steamer basket in the water. Return the pot to the heat and return to a boil. Reduce the heat to low, cover, and simmer for 25 minutes, or until a knife inserted in the center comes out clean.
